A Frenchman who now calls Zurich home, Mathieu co-founded MAME with the belief that specialty coffee transforms lives, as it did for him. Always in search of exceptional green coffee to roast, he is dedicated to growing the specialty coffee community in Switzerland and beyond.

MAME was established in 2016 and is named after the Japanese word for “beans”. The coffee championships have been both the starting point and an ongoing journey for MAME. Through competition, Mathieu continues learning, pushes boundaries, gains knowledge, and builds friendships.

The team has been on the world stage since 2015, reaching the finals since 2018, and this exciting journey continues.

In 2020, the MAME team began sourcing and roasting their own coffees, striving for the perfect balance in espresso and juicy vibrancy in filter. Each coffee is carefully selected, thought through, and mapped onto the flavour wheel. All done to ensure the best possible flavor experience.

INNOVATION SPOTLIGHT

Acaia Horizon - Our latest innovation was co-developed by Acaia and the 2026 Swiss Barista Champion, Mathieu Theis. The Horizon leverages industrial depressurizing technology to redefine the brewing process. Inspired by the pursuit of the perfect cup, the technology preserves aroma and flavor immediately after extraction. It reveals layers of clarity and purity previously unattainable. The Horizon elevates every cup to the next level.

Horizon stabilizes and locks in delicate aromatics at their peak. An integral part of Mathieu’s competition workflow, the technology allowed him to preserve the coffee’s aromatic complexity. It maintained the vibrant flavor profile throughout his routine, helping him win the Swiss Barista Championship title.
